Recipes using Canned Salmon

For a different way of using canned salmon, why not try the following recipe for salmon souffle? It is quick and easy, yet presents well enough to be suitable for entertaining. Most importantly, it uses common ingredients and you won’t have to run out to buy a whole list of items.


1 can salmon
1 tablespoon onion
1 tablespoon lemon juice
2 eggs (separated)
1 tablespoon parsley


2 tablespoons butter
pepper and salt to taste
1 cup milk
2 tablespoons flour

Melt butter and blend with flour. Add milk and cook until thick. Pour over the beaten egg yolks gradually. Let cool. Add parsley, onion and lemon juice to the salmoon, then combine with the white sauce. Beat the egg whites until stiff and fold into the salmon mixture. Pour into a buttered, uncovered baking dish. Bake at 345 degrees F for 1 hour and 15 minutes.
