After coming home from a long day at work, who wants to spend the rest of the evening fixing a big meal? Gather these few ingredients and follow these recipes for a quick dinner in no time!
Chicken and Broccoli Alfredo
You will need: a large cast iron skillet, mixing bowl, fork, spatula, plate, and cooking spray
2 chicken breasts
Mrs. Dash salt-free original blend
1 ½ cups frozen broccoli
1 ½ cups elbow macaroni
Jar of alfredo sauce
Spray skillet with cooking spray and set stove to medium/high. Place chicken in skillet with about 1/4 – 1/2 cup of water and sprinkle with Mrs. Dash. Turn and cook thoroughly until center is no longer pink. Remove chicken to plate and set aside.
Wipe away excess grease but leave any bits of chicken. Bring about 2 cups of water to a boil and add elbow macaroni. To prevent sticking, stir occasionally and add more water if needed .Cook for about 8 minutes and then add broccoli. Continue to cook until macaroni and broccoli are fork tender. Drain and set aside.
Cut up cooked chicken into bite sized pieces. Set stove to low/medium. Place chicken into skillet and add the alfredo sauce. As it begins to simmer, add macaroni and broccoli. Simmer until thoroughly warmed or about 10 minutes. Stir to prevent sticking. Turn off stove and let food cool a bit before serving. Season with salt and pepper if desired.
To make it a well rounded meal include a nice salad and portions of fruit. Serves 3 – 4 persons
Variations: use sweet peas instead of broccoli and tuna instead of chicken.
Veggie and Cheese Scramble
You will need: large cast iron skillet, mixing bowl, fork, spatula, and cooking spray
mushrooms, wiped clean
fresh spinach, washed with stems removed
red or yellow sweet bell pepper, washed with seeds removed
1/4 cup ham or 4-6 stripes bacon
1/3 cup milk
Shredded cheese of choice
Spray skillet with cooking spray and set stove to a low/medium setting.
Determine how much of each vegetable you want . Cut up veggies as chucky or as fine as you wish. Combine eggs, veggies, ham or bacon, and milk in mixing bowl. Add combination to skillet and stir constantly . Scrape side of skillet to prevent burning.
Continue to cook until the mixture is fairly moist but not runny. Turn off stove and sprinkle some shredded cheese over the food. Let set until cheese has melted. Season to taste.
Enjoy a nice buttered croissant and a cup of fruit for a lite dinner. Serves 4 persons
Variations: use salsa, sweet corn, and drained black beans instead of veggies listed above
