This is one of my made up pasta recipes. I call it simple, elegant pasta. It’s delicious and easy!
2 tablespoons of olive oil
4 garlic cloves, mashed
1 lb spaghetti
2 16 oz cans of chopped unseasoned tomatoes
1 lb of Italian sausage
1 tablespoon of dried oregano
1 red bell pepper, chopped
3 – 4 oz of pitted kalamata olives
5 fresh basil leaves
Boil pasta according to proper instructions – al dente in plenty of well salted water. Slice up bell pepper. Turn heat on high to heat the oil. Fry sausage, garlic and pepper until meat is lightly browned. Add oregano, tomatoes and olives. Turn heat to medium and cook until meat is cooked through (about 20 minutes). Right before serving tear up basil leaves and add to dish. Grate good quality Parmigiano Reggiano on top. Enjoy.
