Recipes Low Fat Meatloaf

Why should a meatloaf be forlorn and unloved in the age of low fat cuisine? Although images of meatloaf may not spring to mind when choosing sensible options for a low fat dinner, consider the following recipe as a testament to the meaty goodness and wholesome nourishment contained in something with such a humble name.

Hearty taste can be achieved with minimal fat when you choose to “beef” up the taste with herbs, spices, and sweet-tangy glaze. As someone once said, don’t let your meat loaf…in this case it won’t be around long enough!

Ultimate Honey Dijon Meatloaf

2 1/4 pounds lean ground meat(some fat is necessary, but try to keep the percentage low)
1/2 cup dry panko style bread crumbs
2 large egg whites
1 large whole egg
3/4 cup diced yellow onion
2 teaspoons dried oregano
2 teaspoons Worcestershire sauce
3/4 teaspoons salt
1/2 teaspoon ground black pepper
1 small bunch green onions, green part only, sliced thinly
1/2 cup diced red bell pepper
4 1/2 tablespoons Dijon mustard
4 tablespoons mild honey

First you will preheat the oven to 350 degrees F. and lightly spray a standard loaf size pan with cooking spray. Set aside.

Next, you will combine in a large bowl, the ground meat, bread crumbs, vegetables, spices and Worcestershire sauce. Although it may seem messy, the best technique for this proves to be the “by hand” method. Just be sure to wash your hands in between steps!

Now, you should beat the egg white and whole egg together in a small bowl and add to the meat mixture. Again, combine “by hand” to thoroughly distribute ingredients.

At this point you can add the mixture to the prepared loaf pan and smooth the top of your beautiful loaf. Wash your hands and prepare the glaze.

For the glaze, simply combine the mustard and the honey in a small bowl and brush half of the mixture over the top of the meatloaf. You will then bake the loaf, uncovered, in the preheated oven for 30 minutes.

After the 30 minutes have passed, brush with the remaining honey mustard mixture, and bake for another 20-30 minutes. Your family will undoubtedly be able to smell the savory sweet aroma calling them to a delicious and healthy dinner!
